Ingredients:

  • 6 large carrots, peeled and chopped
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 3 tbsp olive oil
  • 4 cups vegetable broth
  • 1/4 cup Dipasa tahini
  • 1 tsp ground cumin
  • 1/2 tsp ground coriander
  • Juice of 1 lemon
  • Salt and pepper, to taste
  • Fresh parsley or cilantro, for garnish (optional)
  • Toasted sesame seeds  for garnish (optional)

Instructions:

  1. Sauté the Vegetables:
    Heat olive oil in a large pot over medium heat. Add the diced onion and cook until soft and translucent, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.

  2. Cook the Carrots:
    Stir in the chopped carrots, ground cumin, and coriander. Cook for about 2-3 minutes to allow the spices to bloom.

  3. Simmer the Soup:
    Pour in the vegetable broth and bring the mixture to a boil. Reduce heat to low, cover, and let simmer for about 20 minutes, or until the carrots are tender.
